Today I’m gonna show you how to make a perfect Italian Pizza!
Everybody loves Italian pizza! It is probably the most famous meal in the world. The recipe I’m going to suggest you today is perfect for making a long rising dough which let the pizza be light and very digestible. 24 hours leavening and little yeast are the secrets for this recipe that will let you make the perfect Italian pizza. If you want to have the pizza ready for Saturday night, I suggest you to start preparing the dough around lunch on Friday. In this way you’ll have time to work it and put it to rise until the day after.

Ingredients for the perfect Italian pizza
- 500g (1.10 lb) 0 or 00 Flour
- 400ml (1.6 Cup) Water at room temperature
- 20ml (1tbsp+1tsp) Extra Virgin Olive Oil
- 10g (½ oz) Salt
- 5g (0.17oz) Fresh Yeast
The preparation for this recipe of the Italian pizza is really easy. Pour the flour into a large bowl. Make a small hole inside the flour and pour half water with yeast melted in it. Knead all the ingredients using a fork and then add the other half of the water and the olive oil. Last, add the salt.
After mixing all the ingredients, you’ll see that the Italian pizza dough is soft and sticky. Well, don’t worry because that’s normal! Cover the bowl and let stand for about 20 minutes.
After 20 minutes, move the dough on a floured pastry board to form a rectangle. This is the most important step for our pizza because we’ll have to do the folds of the dough. The folds will let create the many bubbles that you have to see on the dough after the leavening.
You will have to fold it like a book with one side to the center and the other side to the center then fold it double. Let it stand for about 30 minutes and repeat the operation another couple of times.
Then, transfer the dough into another bowl previously greased with olive oil and put it into the fridge for about 24 hours. After one day, remove it from the fridge and leave it at room temperature for about an hour. Enjoy the view of its many bubbles!
How to make a perfect Italian pizza!
Then, split the dough into two and roll them out on a well-oiled pizza pan. Let stand for 2 more hours and then staff them as you prefer. I usually prepare one pizza with sauce, oil and basil, and another one with fresh cherry tomatoes, black olives and a lot of olive oil.
Cook in a preheated oven at 250° (482 °F) for 10 minutes and then at 230° (446 °F) for 10 more minutes.
